Bacon & Eggs in Toast Cups

I got my glorious mini cupcake baker for Christmas (it's like a cupcake grill) and realized hey, it's not just cupcake capable. So I experimented a little, made a few desserts, mini quiches.. Then I hit the jack pot with these. The most delicious breakfast food on earth - all in a little cup! This recipe makes 8 (it's of the mini size, in a regular sized muffin pan, I suggest one egg per cup) and I also included directions at the bottom for doing this in the stove. Another good suggestion, instead of wasting the extra pieces of bread from the cups, they are already ripped and perfect for making stuffing!


Bacon & Eggs in Toast Cups
8 slices of bread
8 slices of bacon
4 eggs
1/2 cup shredded cheese
salt & pepper

1. Spray press with non-stick cooking oil of choice.

2. Shape bread (you can use a cookie cutter, I found it easier to rip) to the size of your cups. Depending on the size of pan or press you use, it will vary.

3. In a skillet or pan, cook your bacon until it is partially cooked, but still shape-able, about 2-3 minutes.

4. Crack eggs in a bowl, set aside.

5. Take bread slices and press them into pan holes. Then take your bacon and put in the cups, trying to keep them circling around the edges. Put your cheese in the bottom and them pour your egg in. 

6. Cook in grill for about 6 minutes. 

7. Scoop, sprinkle with salt and pepper and serve!

* When using the oven, preheat oven at 400 degrees. After semi-cooking bacon and putting bread, bacon and cheese in pan, cook for about 5 minutes. Remove from oven, pour in eggs. Cook for 8-10 minutes.

Globe-al Recycling




Creeping some random home DIY projects and came across this really great post. It's 18 Globe projects by Beth at Patina White. I am in love with the clock, it's amazing! Definitely want to try a couple if I ever come across some globes.
